Pear and Caramel Pudding

300ml Thickened cream
1 cup brown sugar
125 gms butter

Cook on moderate heat, simmer 10 minutes, until thicken slightly

Remove from heat and reserve ½ cup and pour remainder into base of greased pan 10 cup capacity

Place 825 gram can pear halves in sauce in dish

Beat 125 gms butter ½ brown sugar add 2 eggs, stir in 2 cups SR flour, ½ cup butter milk and reserve caramel sauce

Spread over pears, bake in moderate oven 1 hour

Before serving sprinkle with cinnamon sugar

Serve with Ice Cream, custard or cream

Chocolate batter Pudding

1 & 1/2 x cups S R Flour
½ x teaspoon Salt
2 x tablespoons cocoa
¾ cup sugar
½ cup milk
2 x tablespoons melted butter
2-3 drops vanilla

Add above items and stir until smooth then place into oven proof dish, then pour over following
sauce

¾ cup brown sugar
¼ cup cocoa
1 & 1/4 cups of boiling water

Bake in moderate oven for approximately 35 mins

Note, good idea to place an aluminum foil covered tray to catch any overflow

BACON WRAPPED MEATLOAF


INGREDIENTS
3 cloves of garlic
1 medium to large red onion
2 cups of chopped mushrooms
2 sprigs of challots
3 silver-beet leaves
about 1 cup of chopped flat parsley
2 eggs
1tbs dry oregano
1tbs dry basil
2 cups bread crumbs
2 tbs Worcestershire sauce
¾ cup of parmesan cheese
salt & pepper
300G minced beef
300G minced pork
1Kg of sliced bacon rind removed
Baste
1 tbs brown sugar
2 tbs Worcestershire sauce
INSTRUCTIONS
Turn your oven on to 190Cº. start by chopping garlic, parsley, challots, mushroom and red onion.
Beat the eggs. in a large bowl combine the onions, garlic, parsley and mushrooms with the minced meat.
Add the dry spices, eggs, breadcrumbs, cheese, Worcestershire sauce, salt and pepper.
Place the bacon on a cooking rack and place the log shaped meat loaf on the bacon and bring the ends up and over.
Use tooth picks to secure the bacon if nesseary
Once your loaf is covered in bacon mix together the Worcestershire sauce and the brown sugar. coat the bacon wrapped meatloaf with half of the mixture and bake for 20 minutes.
After 20 minutes, take the meatloaf out of the oven.
Coat it with the remainder sauce mix.
Bake your meatloaf for another 20 minutes or until the center is no longer pink and a thermometer reads 100Cº. let the loaf rest for 10 minutes before serving.
